Seems solid but for a few odd one.

First off, power supply :
1000w PSU is WAYYYYYYYYYYYY overkill. A 600W PSU is more than enough for ANY single GPU configuration.
If you do want to have the option to Xfire in the future then 850W is already more than enough.
I also do not trust EVGA PSUs.

GPU :
I would SERIOUSLY suggest you wait for the aftermarket cooler R290X before purchasing. Even a aftermarket cooler R9 290(non-x) should be able to outperform a stock cooled 290x.

RAM :
For editing, get faster RAM, you can get extra case for it by dropping the 1000W PSU.
At the very least get 1866MHz RAM, but the faster the better for editing, even if you only get 16GB of FASTER RAM.

Here, dropped some cost of that was really unnecessary.

HOW ARE ASROCK's mobos towards overclocking?

Not really. Since the GTX780ti is heavily nerfed for compute and OpenGL is now more heavily used in Adobe.
But yes, in general the Nvidia card will perform better for now. As for its price...

OK. How's this one? Have the 7990's prices risen up again? Somewhere like 800 - 900 bucks?
