Can my PSU handle this crossfire setup....?

That PSU will be able to run both the cards and you will still have some headroom to OC your components.
I have 2 r9 280x's and im using an xfx 850W pro series PSU, my cpu is OC'd to 4.6, both my gpu's are also sapphire r9 280x's vapor-x (same power consumption) oc'd to 1200mhz and 1600mhz (gpu and mem respectively).

I suggest the Corsair AX 860i if you are are buying a new one.

I think it should be enough, those 2 cards would use ~500W at MAX when in crossfire.
A single R9 280x should use ~290W when playing games like crysis 3 or sleeping dogs on 2560x1600 resolution.

Also, since my GPU setup will be similar to yours, are you seeing any microstuttering in your gaming experience? I believe that AMD has yet to release drivers that fix microstutter in the 280x/7970 class, only for the 290/290x. How bad is it?

With the latest beta drivers i'm getting very less micro stuttering although it is present but it isn't irritating in most games.

Also, regarding the PSU, go for the XFX 850W Pro Series Bronze+, cheap and very good (im using it :p), same OEM as AX series, Seasonic.
