I am trying to figure out why my card is CTDing when it gets to 70C.
It doesn't matter what game I play. Mass Effect 3, Far Cry 3, BattleField 3, Crysis 3, Skyrim (modded), MoH:WF, etc.

What could be causing this, (and other than lowering the graphics settings in each game to keep the GPU cool) , are there any other options, fixes, patches firmware/bios updates that will correct this?

Get an overclocking software and enable K boost! Then lower all clocks by 10 MHz, then increase fan speed in options so it's a little higher, ur done! Maybe ur temp censor is gone and it stalls the card?

The sensors are fine, as far as I know. They register everything from 20C up to 70C when it crashes. I am trying to figure out why it crashes at 70C, and how to fix it.

The temp itself is well within operation specs.

The problem isn't the temp itself, but rather the card crashing when it gets to 70C.
