Mid-game my system slows down to a crawl

While playing many of my PC games my system suddenly becomes extremely slow. The game lags and even after quitting my system will be slow. I have a fairly decent rig and can run the majority of games with the settings maxed out. I can easily play for an hour or two before this happens. It is always sudden and the result is fairly severe. In some games the screen will go black for 1-2 seconds before the displaying the game again. Any advice from you fine people?
