Did I destroy my $500 graphics card???

I have a GTX 780. I am in the process of assembling my water cooling loop and got to the point where I was going to install my waterblock to the card. Well, while removing the fan coolers from the card, I accidentally broke off the fan plug in for the stock cooler. I am watercooling it so I dont care if that just means no more fan coolers on the gpu. But did I damage or destroy my card?!?!

Probably not, as long as you didn't knock any other components off the board or rip up traces.
If worst comes to worst the connector can be replaced

yea your cards fine. Just make sure when you ripped it off, the remaining metal contacts are not touching each-other, as this will cause a short-circuit.

Considering you're putting in a water cooling block, you won't even need a fan in the card anymore. So yes, make sure any broken off wires aren't touching and you're good to go.

Absolute worst case scenario, find someone that's got really good hands and knows his way around a soldering iron.

Well you have certainly damaged it, you broke off the fan connector :p 
Whether that matters or not depends on whether you ever intend to put the stock cooler back on.

Just make sure the pins that were in the connector aren't touching each other or anything else. To be safe you might even want to cut them off.
