Hello, just wondering two things:
1) Can I use two at the same time safely with this power supply
2) How? I have one large cable that I am using for the current card in the system, (6+2 PCIE connector, and 6 pin pcie from one large cable). How do I plug in the other one, I do not have another one of these larger cables. Thanks!

Solution
1. absolutely fine, system equipped with 2x r9 280x, actually consume less than 500w in gaming load..

2. your psu has 4x (6+2) power pin for graphic card..so, there's no issue with any multi configuration card setup(Crossfire/SLI)..
1) Yes, that 850W PSU should be plenty for dual 280X's
2) From the product specs and images it looks like there should be a (6+2 & 6 pin) set of cables hard wired from the PSU. Then there is a modular set that adds an additional set of cables for a total of (2)6+2 and (2)6 pins.
