So, from what I gather, since i had a graphics card that will get me more than 60 FPS on most games, and i have a 1080p monitor with a 60hz refresh rate, I would have to turn on v-sync or else i will get screen tearing?

Thats basically right.

I usually play for a while with vsync off and monitor my FPS. If it is generally above 60, i turn on vsync.
On some games, vsnyc also introduces mouse lag and in those situations i switch vsync back off.
