I finally got my parts in and the computer together. Looks like my 4820k is running between 34 - 38 degrees with my 212 evo (one fan). when I set the Ez bios to optimal mode it jumps up to about 50 degrees. Im reading this from the monitor on the bios. The comp is at idle with no programs running. Im wondering if maybe I didn't get the heat sink installed just right iv read that if the heat sink rotates too much on install it can form air pockets in thermal paste. Or is this heat sink just not enough.

Sabertooth should also come with temp monitoring software in AI suite, assuming it comes with the same software as the other sabertooth boards. Between that and HWMonitor you should have enough sources telling you how hot your computer is
