I currently have a AX750 and was planning to upgrade and get 2 gtx 780 ti's..

I'm currently thinking between a AX860i or AX1200i, which of those two are the best? or do you have any other PSU that's reliable that I can use without spending too much cash?

Your Current Power supply is more than enough....no need to buy a new one :)
