Long story short...I upgraded my computer from Windows 7 Home Premium to Ultimate for 64 bit. I don't want Ultimate, and would like to go back to Home Premium. I bought the laptop refurbished with Home Premium on it and no recover disk. There is a windows.old file, can I recover Home Premium from that file and install it? I want to reformat my computer so all data is gone after I reinstall Windows 7 Home Premium. Thank you in advance.

You can see what's in the windows.old file, but just clicking on it in explorer, because it's actually not a file, but a folder. I don't think you will find your personal files in there. They should be in the c:/users/<your username> directory. You may have changed the username, while installing ultimate, but as long as you are logged in with an administrator account, you can click through the file of all users or simple search for a filename you remember.
Sorry, but there is no visual difference between Home Premium and Ultimate. Please explain, why you want to go back in more detail. The easiest way to go back is to download a Home Premium ISO file and install it. Most importent: do you have the product key?

The Ultimate was a disk given to me from a friend, one time install disc, so I can't activate it. I also bake out of my home as well as work full-time, and all my recipes are in the documents folder in the windows.old file I think? I would like to get them back as well. I thought I had printed off all of my recipes, but did not. :( Yes I do have the key for Home Premium.
