Gaming build for £500, £1000 and £2000

Im looking to build a new pc for a joint birthday and christmas present cos they are close to eachother and i have a budget of £2000
i have built computers in the past for friends and family and i am ok with doing custom water cooling.
but i have no idea what components would be best.

i would like to run 3 hdd and a ssd
3 dvi screens
the pc will be used for rendering and editing videos to 720p
and playing games such as arma, dayz, total war games, planetside 2, starcraft simcity 2013 bf4 and some indie and alpha games.
