With a PC, I can install a full image of Windows (with applications already installed, etc), which greatly quickens the setup of new computers. Can I do this with OS X?

More about : install image

OS X Disk Utility allows you to create a .dmg of your boot drive which I think is what you are wanting. After installing the OS and the app's you want you can create a .dmg and then you could use that to install the OS the next time. I did it once with my Hackintosh drive and it worked quite well.

Yes. It's much easier in OS X than in Windows; the imaging software is part of the OS.
