Hi. What is better, 2gb in dual channel or 4gb in single channel? I have windows 8.1 64 bits and the ram modules are ddr2-800mhz

If your choice is between 1x4GB or 2x2GB; 2x2GB is better.

The memory controller is integrated in the CPU in modern processors, on the motherboard before that.
If it has dual memory channels, than you should ideally use a kit with two dimms (e.g. 2x2GB).
Some high end processors have up to four memory channels, so in these you should again match the number of dimms to the number of channels.
The truth is though that memory performance is not a limiting factor in many processor workloads, so the configuration of memory isn't that important.

My options are 2x1gb and 2x1gb + 1x2gb

I'm not sure if the second configuration will work, where one channel has two dimms and the other has one.
No harm in trying it anyway.
Certainly having 4GB RAM is better than having 2GB, no matter what the configuration.
