I"m using a 50" 720p plasma TV as a monitor. My GPU is an old 8600GT, and I use the D-Sub hookup because it doesn't have an HDMI hookup. (it does have a DVI hookup, but the TV doesn't)

I am upgrading my PC, and the GPU will likely be a 650 Ti or Ti boost. Obviously it's a better card, and I'll be using HDMI, but I'm just curious, if I again use the D-Sub connector, will it be a bottleneck? What about on a 1080p TV?

dsub has an analogue conversion stage hence the image is not as sharp. try a dvi to hdmi cable/convertor.
