I've had a IMac for 4 years now and it's pretty bad but i like the portability of it.

So, can you guys help me build a super crazy mini itx PC in the $1600's?
Including a monitor.

Here's some partsi like:

ASUS Z87I-PRO Motherboard

i5 4670k CPU

I'll be doing some video editing, Gaming and some other graphically intensive goodness.

Solution
I think this build will do nicely.

Its pretty much just a gaming rig, so dont expect amazing video editing performance from it. The monitor is a professional grade IPS panel so your going to get good colour accuracy from it (I have it myself and its pretty good). You can upgrade the RAM to get 16GB later on if you wanted.
