So I recently built a new gaming computer after some complications with my old desktop. After opening the old one to replace a part, I saw it was filled with dust. I don't want this to happen to my new one as it is quite expensive and brand new.

My question is what is the best way to clean it, and how often? Im guessing compressed air in a can is the best but I'm not sure. Is there any difference between brands?

Compressed air is best, like a air compressor not just canned air. If someone smokes in the house, you would need to clean it much more often than in a house with non-smokers. It matters how much dust floats in the house and if you have pets or not.

I've used brushes and vacuums on fans (better not do that, static from a vacuum can destroy expensive electronics). I'm a smoker, so that's what i do to get the fans to last longer. Also replace them when they are getting ready to die.
Clean the dust filters on your case if you have them, and yes, periodically use a can of compressed air on the cpu cooler and video card fan. I wouldn't worry about brand though. Other than that, there really isn't anything else to do. You can use any cable routing options your case may have, or just clean up the cables as best you can for better air flow and to eliminate places where dust bunnies will build up.

Thanks both of you for the advice. Since I do have a cat and someone in the house smokes I'll clean it more often. Would once a month be good enough or should it be more often?

Since its already filled with dust and you said its brand new I would use that as a guide. If the dust you see is too much for your taste then split the time that you've had it in half and check it then. For example: if you've had it 2 weeks then check it every week.
