It wouldn't cope well with your CPU unfortunately. 1 GB nowadays is nice for average-gaming (medium settings)
If you want a more powerful GPU in the future make sure to upgrade your CPU first or you'll be bottlenecking

So 1gb of 7850 wouldn't bottleneck my "crappy" cpu

it's average haha, consider my main PC as of right now is a laptop haha.But no, the GPU-CPU combo I suggested will work very well
