Since it is an extreme end pc 16 gigs of ram is not an overkill. It will be useful on the way. It is not required at present but in future it will be.

Is there a reason? I've always been a GeForce guy, but I'm open to change. I just don't have much experience with AMD

Hmm the 290x is probably one of the bst bang for buck cards on the market atm but it does run a little hot. If you can kep it cool it can out perform most nvidia cards. and it cheaper than 780 too.

I guess but i play BF4 on high and dont even use past 3 gb of ram at full load 16 is just a little but overkill you can always add two more 4gb modules when you need it. and it you do go 16 get 4x4 modules anyway. Since its faster and more stable. Think of ram dimms being used like a raid setup. Coz thats how they work :p
