Is it possible for me to take my 120gb evo that has my win 8.1 pro OS and some programs and files, and create a striped raid setup by adding a second 120gb evo? I also have a 2tb secondary drive that I could use for temp storage.

1. No. A RAID 0 needs to be built from the ground up

2. Why are you thinking of doing this? You gain zero performance boost, and add complexity and chance for fail.
Just add the new SSD as another drive.

shouldn't raid 0 increase read/write speeds?

With SSD's, in normal use, not really.
