You still wouldn't need it (you could run 640*480 and it would still work, just being very wasteful). If you have a budget that allows you 3 780 ti's and the monitors to go with it, then by all means go for it and more power to you. While we are on the subject of power though, make sure you have at least 1k watt PSU if you do plan on running 3 780 ti's, you could get away with 850 but if you are spending that much on GPU's then spend 60 more bucks and make sure they have juice to spare.

A 4K screen is a screen capable of driving 4K resolutions for incredibly crisp picture. It is uncommon at the moment to find content at 4K resolution as it is relatively new and the technology to drive it is expensive. If you are thinking about buying one for gaming then expect to spend a pretty penny to get it up to a decent frame rate and for the monitor itself.

You don't need it although that is enough GPU power to use it effectively. If you are looking for opinions, I would just go for two 1920*1080 monitors anywhere from 21-24" as they together would be a bit less then one 4k monitor.
