Help configuring HDD after OS is installed

I will be building my PC tomorrow, and all my parts are here, apart from the HDD. I have an 128GB SSD for the OS, as well as some programs, drivers etc.

This being my first build, I am very eager to get started, and do not really want to wait until my 2TH HDD gets here next week.

Can I install my OS on my SSD, and then in a few days time, add my HDD, and begin to install games?

I also have a 160GB laying around, can i start to use this drive for a few days, get a few games installed, and then copy everything from the 160GB to the 2TB? How would I do this?

Can I not just completely clone the HDD, and set it as the same drive letter after? Sorry this is my first time building and I am fairly new to it all.

Install on the SSD
Verify everything works and all of that
Connect the 160GB
Install some games on it
Get the 2TB
Install
Install other games on that.

If you're using Steam, you can easily move games back and forth, or even have them on multiple drives.
No reason to not have the SSD, the 160, and the 2TB all installed at the same time.
