Which one is "better"?

As a general rule, yes. The thing is, the only thing that the Intel processor has that the AMD doesn't is Hyper Threading. For all intensive purposes, the AMD looks better.

Okay, thanks.

Just out of curiosity, if I did get an AMD (which I don't think I will now, after reading all of this stuff), can I change it out for an Intel, or vice versa?

My 2 cents (if anyone cares)

The INTEL is best by far. While games are becoming better threaded and an FX-8350 can match a recent i5/i7 in a few new games, the Intel simply dominates.

SKYRIM for example has the i5-3570K ahead by about 35%. Ouch.

The i7 is more expensive, and while faster in a FEW games than the i5, it also is $100 more. I bought one myself because it averages about 25% faster for encoding video. I recommend the i5-4670K though to most people since you'd be lucky to see a 10% difference in games depending on other components; if you're more GPU-bottlenecked it will make probably NO difference.

And while I generally recommend the new HASWELL, the previous gen is good if you find A DEAL ON IT. Thus:

If you find a good DEAL on the motherboard/CPU:
1155 motherboard + i5-3570K (or i7-3770K)

Otherwise:
1150 motherboard + i5-4670K (or i7-4770K)

Summary:
My QUICK advice is get a Z87 1150 motherboard, and an i5-4670K CPU unless you get a deal on previous gen, or think you need more processing power on the CPU.
