What should I put on an SSD and what on an HDD?

Just built a new computer and I put a good old 1 TB HDD in it, now I'm looking into getting an SSD to go along with this. After doing some research and finding that the HDD serves best to store things on I was wondering what would be smart to put on which? I understand that things like the OS and say Chrome should definitely go on the SSD but was wondering with games what should be put on what. Say for Skyrim, a game which takes a lot of memory after you do some modding and add in the DLCs, is there a way to keep most of the data off the SSD while maintaining load times?

Also assuming that I want to have around 5 games and my basics on it (OS, browser, Office, etc.) would a 120GB be fine or should I play it safe with a 250GB?

250 would be playing it safe, trying to install multiple games on a 128 gb hd can be quite difficult, and it allows for there to be some free space present on the ssd. 20 for Skyrim with mods, 18 for bf4, 35 for 3 more and you have 73 gigabytes full of games, not to mention another 50 for other programs and the os and you 128 is already full.

For me, I have my OS, all my applications, and my most played games on the SSD.
If the game is HUGE, I put it on the HDD.

I keep my pictures, music, documents, other games, etc. on the HDD.
I have a 120gb SSD and a 250gb HDD (upgrading to 1TB soon) if that helps.
