What's more cost effective? WD1 TB Caviar blue of WD 500GB Caviar black?

I'm building a gaming rig and I would like to know what would be better on a budget. I heard that the black was better for performance but the blue is better for general use. Also is there a difference if "Caviar" is in the name or not because on amazon there's blue and caviar blue.

That link should help you. They are quite different. Black is a performance drive, greens are a value/energy savings drive, blue are somewhere in between.

For a operating system drive I would most certainly go black.
