You should be fine but instead of getting a GPU based off the reference design get one from gigabyte, MSI or ASUS there designs are much better. That cpu cooler is a little over kill considering you cant over clock your cpu. A cooler master hyper 212 EVO would be work just fine and its only 30 bucks. It keeps my Xeon 1230V3 Boosted at 3.6 Ghz at an average of 55 degrees under full load. Instead of a hitachi drive get a Western Digital Caviar blue 1TB 7200 RPM, its faster and its 60 bucks on amazon.

They're all 2gb card but that more then enough, that extra gb in the card you listed above isn't really going to make much of a difference at 1080P

It's only January. Start worrying about builds in the May/June time frame. I'd say no more than two weeks before you're ready to purchase and build. Too many things can happen between now and then to change the cost of a build.
