Getting to a gaming 3 monitor setup with $1000? GPU+Monitors

I want to upgrade to a 3 monitor gaming system. Below is what I'm working with now, and I'd have about $1000 to buy a new GPU and the three monitors. What would you suggest for both the GPU and monitors?

CPU - Intel i5-2500K
System Board - ASRock Z68 Extreme3 Gen3
GPU - NVIDIA GeForce GTX 560 Ti

its another option if you want big screens. a racing simulator like dirt 3 with the steering wheel and foot pedals combined with 3x27" screens is quite immerse.
