I was wondering, is it hard on my GPU to turn off my OC every night? I didn't know if it was better to keep it on all the time

Just leave it ON all the time.

Your card already drops into a power-savings mode anyway when not stressed. You can tell because the fan is temperature controlled, so like your CPU FAN (if the CPU fan is setup properly) it varies proportional to the temperature of the GPU.
