760 sli over kill for 60hz???

Hi there I have only just learned that 60hz means you can only get 60fps max on your monitor. Now there was me going for 760 sli to have 120 fps. Now I'm only going to be playing 1080p did have a asus 27 inch 60 hz monitor selected at £180. Now to get an asus 120/144 hz it's another £150 plus. Is it all really worth it? I wanted more fps as I was caught up on getting a ps4 and building a pc for video editing or building a nice pc for both gaming and editing so I could get it better than the ps4 but to learn the monitor would limit me to 60hz is disappointing. Is it worth the extra money to get a 120 /144 hz monitor also is there a big difference between 24 and 27 inches? Thanks

I am put of getting a 144 hz as the display quality goes I need that with editing and photo shop pro. My main question is is ort worth me getting 760 sli as it will be caped at 60fps or shall I get a single 780 for same price?
