Before I start I am not building one, I know it's cheaper but I am just not so please don't put up pcpartpicker. I was wondering if there are drawbacks on some of the items I have picked or any warning and which is the best. I have picked out three here they are:

Looks fine. OF course it is overpriced and you could build one with the same or better specs for less money but that is the nature with prebuilts.
None of them

the second two have the CX750 PSU from Corsair which should be changed to a 650w PSU of better quality. The CX line is not great. The first system has an even more junk PSU.

16gb RAM is pointless for gaming.

The CPU cooler on the second one is not very good for overclocking at all. The liquid cooler on the third one is not good either. A coolermaster hyper 212 EVO is what you want.

Damn, I can't pick anything right, If I change the the cooler would it be good? Also I changed to 16gb because someone said that 1x8gb of ram is bad since it's half the power
 
1x8 is not half the power. It just runs at single channel vs. dual channel. There is about a 1-4% performance difference. Whoever said that is a moron. Yes you should try from 2x4gb but it is by no means necessary, and 16gb is pointless for gaming. It will add ZERO performance over 8gb.
