The Snipers are obviously the faster set, what hardware are you planning to use mobo/CPU? The Snipers work well with everything I've put them with, big thing is if your CPU can carry them, many AMD CPUs in particular have trouble w/ 1866
use the gskill areirs ram if your using a newer intel motherboard. some of the motherboards dont like gsill snipper ram.
if your getting intel mb 1866 ram will be fine if it 1.5v. the intel memory controller spec for 1.5v or less. the standard speed for intel mb is 1600 but will run fine in xmp mode at 1866. anything faster and your tossing your money out the window.
 
I would pick the 1866MHz CAS 9 Sniper RAM out of those two. The Ripjaws X linked are slightly slower (1600MHz). You won't really notice much difference in day to day use, though. That really depends on what the rest of the system specs are. Some systems would be able to utilize the extra speed better than others.
