copy hard drive using sata wire 3.0

I'm trying to copy the hard drive from my acer laptop with windows 8.1 to a dell vostro desktop with windows xp using the apricot sata wire 3.0 notebook drive upgrade kit that is backward compatable to usb 2.0. I can't find data on "my computer" and under computer management, I can see the drive, however when I go to alltasks, change drive letter and paths are greyed out and I can't click on it. It says the drive is healthy and gpt protective partition. How can I get the data transferred from the disk drive to my desktop? Please help!

I've realized that it won't work on my windows xp without coverting the drive, so I changed tactics to copy the data to my wifes laptop with windows vista, but it still shows up greyed out. But no longer a gpt protective name. What's the deal? Why can't I copy the data? Does it have to be a desktop without windows xp?
