Why does Minecraft runs strangly?

Ok so I just purchased a new fairly decent gaming rig. It was a custom build from tigerdirect.

Specs-
cpu=Intel core i5 4570
gpu=evga geforce gtx 650 1 gb
psu= 550w
Harddrive=1tb

So heres what is strange I dont know how many people are familiar with minecraft but the game runs off java and its like my favorite game. Its pretty much the reason I bought the pc. The first day I got the pc I ran straight it plugged it in and downloaded java and minecraft to begin playing. To my surprise I had a whopping 200+ FPS
This was awesome considering I would get like 60 on my macbook where I use to play. All was well but when I tried to allocate more ram it said fatal error occured could not create java virtual machine. I realized I had the 32 bit version of java so I installed the 64 bit for the computer and restarted minecraft. When I entered the world I noticed the fps was only like 22-30 I did not understand this and so I turned full screen o and off and then v sync and that did the trick. How ever every time I completely quit the game and relaunch it does the low frame rate. I don't know what causes this. I updated java, I re-installed both java and minecraft multiple times, set java's priority to high and still nothing. Sometimes its 22 fps sometimes its 30, sometimes its like 220. Why does it do this? Should I try to update my gpu drivers any suggestions would be great!

So then retrace your steps. Uninstall Java completely from your computer. Reinstall Java 32-bit. Don't try to fix something if it is not broke. Also, you do not need to allocate more RAM towards your game, remember you only have 1GB to work with because your graphics card only has 1GB.

The most probable reason why you got a fatal error my allocating more ram is because 32-bit of anything can only handle less than 2GB of memory. That, or you made a typo and told to use an amount of RAM that it doesn't have (ex. 2000mb but you put 2000gb).

Just a few more things i'd like to add.
1. I'm not allocating video card memory im allocating my computers ram so that shouldn't have to do anything with the video card.
2. I found that the first time I install any type of java,64 bit or 32 bit the game runs at the high fps. When I close the game and re install java it goes down to the crappy 23,45,weird fps.
3.I need to allocate memory because I play other versions of the game that are heavily modded and need the extra ram to operate properly. So 32 bit is out of the question.
4.Its weird if I start the game and look at my fps when I first enter its anywhere between 22-46fps if I wait like 2 min
it jumps to 60 and is locked with v-sync on.

Any other suggestions?
