I have been planning on making another gaming rig that is capable to overclock and edit videos very well. I plan on getting a 17 4770k, 780 ti gpu, 32 gb of ram, raid 10 ssd's and have to whole system water cooled with a 900D case. With all of these parts combined, it starts to get pretty pricey and I just wanted to ask everyone what they did with their systems. I have read many people stating their powerful parts such as 4960x and quad titans and wonder what they do with all of it. I realize a powerful pc makes applications run faster but is there anything else a powerful pc can do?

'anything else' ?

Running multiple VM's. Development and testing on Server 2012, hosting a SharePoint server, and Win 7 client. While running a Linux VM playing a movie on the other screen.
All sitting on a Win 8 Pro host with normal stuff running. A couple of Firefox instances, Outlook, Excel, etc.

'Gaming' is not the be all and end all of computer operations.

I don't know if my humble 3750k and 7950 crossfire makes my computer powerful, but I play some games on 3 monitors and do general admin, emails, surfing, a bit of photoshop, Blueray ripping & video conversion on my PC

People spending that money are FPS freaks who love getting every possible frame out of their games, and those going for incredible resolutions.
Multi monitors at 1440p and 4k will require some of the extremes you have posted.
