What's an "ideal" temperature for AMD 7950(s)?

I can keep my 7950 Crossfire setup in the high 50s / low 60s with 50-60% fan (depends on the game). Would it be okay to lower the fan noise by putting it on 45% and letting the temperatures get in the 70s?

My case has a 90 degree rotated motherboard so both cards run at nearly the same temperature (I don't have a "top" card) . I guess what I want to know is: what's a good temperature to aim for? Is there going to be a noticeable degradation of the cards at 70 -80 degrees? 60% fan on two cards is quite loud (but I can deal with it if temperatures are that important) .

So what's a good everyday gaming temperature for 7950s?

You're half-right. The HD 79xx series has a max temperature of 85C but the R9-290 and R9-290X are designed to be able to run at 95C with no ill effects. My old Radeon HD 4870s could run stable at 100C or more. It all depends on the generation and GPU architecture involved. Some Radeons need to be cooler, some can run fine at extremely high temps. It really doesn't depend on the brand. Letting the temps go into the 70s is fine, as long as you know that it's only going that high when under extreme...

amd cards like to be abit cooler than their nvidia counter parts (usually anyway).
70c is normal operational temp underload. 80 is getting on the high side, but shouldn't cause damage. Wouldnt want to see my 7870 go passed that.

If you let it go into the 70s when not gaming, then it will go into the 80s when gaming and damage could occur. The easiest solution is to game with earbuds like I do. Then you hear nothing but the game itself.
