Barebones system advice

For the past 5 years I've been using an HP XW4000 I bought from ebay and gradually upgraded components. (fitted another processor, upgrade RAM, SATA PCI cards for more HDD, upgraded graphics card etc).

However, the main SCSI drive which held the OS died recently and I thought I might take this opportunity to upgrade the whole system and transfer what components I can across.

Can anyone recommend a new barebones system which would suit my needs:
*SATA compatibility for all my HDD, at least 4.
*RAID would be a bonus as I would like to try and use it like a server as well.
*At least 2 PCI slots.
*Powerful enough processor to deal with heavy video editing and RAW image post-processing.
*Multimedia output to connect it to TV (S-video).
*Dual monitor output would be another bonus.

Thanks for the detailed reply. Budget is under £500. I was kinda hoping I could bypass most of the configuring work by buying an off the shelf server/workstation second hand, then customise it...

Or would it be better to build myself?

So based on that, what sort of CPU should I go for? I'll upgrade the RAM to at least 4....and will shop around for a decent GPU.

I just wanted to save myself hassle by buying a server that already suits my needs, then upgrade the bits I need.

It would definitely better to build the workstation PC yourself; you would definitely save a lot of money long-term.
