Hi I recently applied a new thermal paste to my CPU and after about two days, I turned on again and HWmonitor CPUID is reading temperatures from 54 degrees to 84 degrees celsius . BIOS had 64 degrees at first then it suddenly jumped to 82 degrees. Didn't have any game on. I am confused why I'm seeing such drastic changes in temperature. Also before applying my thermal paste, my computer would shut off when my temperature rose to 80 degrees. Now, it's reading it's 80 degrees but not shutting off. Is the sensor damaged or something?

When you have a CPU that runs at a normal temp but than jumps a large amount under load, it is almost always a case...

A quick search tells me it shouldn't have shut off at that temperature to begin with, but that is too hot for normal operation with that processor. I would say there is something wrong with either the heat sink, fan, or the thermal paste application. That seems awfully hot to me.

When you have a CPU that runs at a normal temp but than jumps a large amount under load, it is almost always a case of the cooler is not on correctly (or possibly thermal paste is on wrong). Given that you just took the cooler of, that is pretty much certainly your problem.
For your second question, that CPU has a TDP of 95c. It is not supposed to shut off at 80c.
