Im currently building a computer to use it mainly for Video Editing and 3D visualisation and modelling. By my search for building i've found the Intel Xeon E5-2620 v2 2.1GHz LGA2011 6-Core and the Intel 4930K 6 core 3.4 GHz ?

So what is the difference ? Which one is the best for my work ?

Xeons normally had more cache memory and +4 core configurations are available. That's normally great for servers, but for single threaded stuff, a Haswell i5 can beat a Xeon as demonstrated in Anandtech's Mac Pro review.
