Workstation configuration / searching for wise advice

Hi! I want to thank you in advance for taking the time to read and share your wise advice. So, I'm building a workstation for producing 3D images (mainly architecture visualization) first of all:

1. I'm using my WS mainly for very detailed 3d modeling and rendering

2. My budget is 3500€ including Windows, a pair of monitors, keyboard and mouse.

3. I live in France, I'm getting my parts from amazon (.fr/.de)

4. I'm starting from scratch, I don't own any components

5. Software / Windows: 3dsMax 2014-Vray, Rhinoceros 5, Z-Brush, Marvelous Designer, Adobe Suite (Ps,Ai,Id)

Here's the configuration options i've thought, please do not hesitate to point out my nonsense:

Option A:

24GB memory is not good idea. You need 16GB or 32. Four or eight sticks works best with X-79 2011 mobo + cpu
I think GTX video carfds perform better than expensive quatro cards. Maybe good idea is get 780(Ti) 770 is cheaper and with 4GB memory it is good buy. Other good 4GB 770 is gigabyte.
780 EVGA Super OC ACX or Zotac amp. Asus and gigabyte is good choice too.
PSU is bit overkill but good quality. 650w is enough for build like this.(more than you need)
850w is enough to SLI 780's Zotac AMP's are so power hungry cards and with them is better take 1000w quality psu.

So:

check for the memory (either 16 or 32)

for the graphic card, I just want to be sure I won't regret not having picked the Quadro (as I'm not at all using my PC for gaming, just for really heavy modeling and rendering) What are your thoughts in this matter?

For the PSU, check. So I take at least a 1000W?
