I currently have an AMD Eyefinity setup with 2 x Radeon 5770's. Needless to say it hopelessly under powered. My goal is to upgrade the GPU, either 280x or GTX 770. Both should provide an adequate upgrade with a 2nd card added in about a year. BUT....
I would like to Drive a 4th monitor ( 27" 2560x1440). Can I run a 3 monitor setup and the Higher resolution 4th monitor off one card. Also can either card allow me to game in 5760x1080 on the 3 monitors and watch a movie on the 4th?

Solution
On both of my AMD rigs I can run Eyefinity with a 4th extended monitor with no problems at all. On my intel/Nvidia rig no matter how I try to connect a 4th monitor it always disables my Surround setup. I have been trying to sort it out for almost a year with no luck. The cards,GTX 670, according to Nvidia can run Surround with a 4th accessory display but it has never worked.

With AMD all I have to do is plug the monitors in and then I can select what monitors are part of the Eyefinity but with Nvidia the drivers are in complete control of what monitors are part of the Surround and no matter what they will choose my 50" Plasma as part of the Surround and disable one of my 27" monitors. All three of my 27" monitors are the same make...
It will depend how many display output ports the card has. For example ASUS GTX 770 has 4 output ports ( 1 x DVI-D, 1 x DVI-I, 1 x Display port, 1 x HDMI). So yes you can get all 4 monitors working with a single 770.

I am not sure about your second question, so wait for someone with more specific answers, but I think you can. Good luck.

In short for a good Eyefinity/Surround setup choose AMD it is just better all the way around.

The main problem you will have is a single 770 will not produce playable FPS. It's not strong enough. You will be able to set it all up but it won't be playable. To play in eyefinity or surround you need a 780ti, titan or you will have to crossfire/SLI 2 upper end cards.
