I tried assembling a PC and the way I did the wires they stick out really far so there's no way I can get the panel back on and I can't redo the wires either 'cause that was really hard for me so can I just leave it off or is that a problem? A few of the wires don't even go to anything like the fans because my motherboard has 4-pin connectors for those and the fan wires are 3-pin.
is it okay to leave the right side panel off where the wires go out the back?

It should be fine, it'll be ugly, but it'll be fine. And you can plug 3 pin fan connectors into 4 pin motherboard connectors.
