I've currently got a setup with
- i5 3570k @4.9ghz
- 24gb ram 2133mhz
And in want to buy a graphics card but i'm afraid i'll bottleneck my cpu, Because i was planning on buying a single r9 290 and in the future upgrading it by buying a second one. But i could get 2 palit gtx 680 4gb. In sli for 400 euros. In stead of buying 2 r9 290's. So my question is. is it worth buying 2 r9 290's for 800 euros or should i buy 2 gtx 680 for 400 euros with my cpu?

Your CPU Won't Bottleneck Either Situations
Buy 2 Gtx 680 IT WILL GIVE U MIND BLOWING 1080P PERFORMANCE 75+ FPS IN ALL LATEST GAMES
IF YOU ARE PLANING ON RESULTION ABOVE THAN 1920X1080P THAN GETTING R9 290 IS GOOD FOR YOU

I'm planning on using it with my 5760x1080 monitor setup. So will the r9 290 be able to handle it better, Because if so i'll go with the r9 290. because it'll be a while before i'm able to buy a second r9 290 probably about a month or two.

Well from what i´ve seen the difference between a r9 290 crossfire setup and a r9 290x crossfire setup is only 1-2 frames in battlefield 4 and i´m not willing to spend an extra 300 euros for 2 frames.
