Can I setup 3 internal SSD's in a RAID 0, and then have that RAID array in a RAID 10 with a single internal HDD? or will I have to use an external HDD to backup my files?

No you can't , min drives for raid10 is 3 . If you be able to create hardware raid0 with 3 ssd, you won't be able to use this with only one extra drive as raid10
