That would be 5760 x 1080. Quite a burden for a single 7870..... I would say yes it will be playable but may look so bad from the very low settings you would be better off playing on a single monitor.

Skyrim is also very CPU dependent and would benefit hugely from a CPU overclock on your part.

That card supports 4096 x 3112 on an HDMI connection or 2560 x 1600 on a DVI connection. Whilst it should be possible with HDMI, your GPU will struggle and like anort3 said, the lowest settings will look terrible across three monitors.

Multi-monitor gaming really needs a GPU in Crossfire/SLI.
