The 200R comes with two fans. I'd buy two more. Great build, apart from that. You should be able to max Battlefield 4 at 1080p for example - 50+ fps on ultra :)

how hard is it to update psu's after its been built and what case fans would fit in a 200r
 
It wouldn't be hard, but why pay for two PSUs... I know it's not easy to decide now, but you risk wasting £81.18 if you buy the 650W PSU now and then decide you wanted SLI after all. Of course, if you buy a £120 PSU now and then you don't do SLI you've wasted £40... Don't rush it, think about it for a while.

For example, any chance you'd use two monitors, or buy a 2560x1440, or even one of the new 4k monitors? (There's a Dell 4K monitor for about $800, I want one...) Those would be reasons to want SLI.
