Depends on the individual screens in question. TVs are essentially just LCD panels with television tuners in them.

The thing to watch out for however, TVs will often have a lower resolution than a dedicated monitor of the same size.

Response lag and pixel density is entirely up to the particular panel used in the set. Only you can decide whether or not a screen's output will be acceptable or not. Perhaps if you had access to a laptop with HDMI you could be nice to somebody at a local TV shop and see how it interacts with different sets matching your criteria and see just how you like the output.

Another issue to take into consideration is over scan. TVs for some unfathomable reason still perform over scan on digital inputs. This causes a good portion around the edge of a PC screen to be thrown out, meaning things like the taskbar are outside the visible bounds of the screen. This can not be overcome with some cheaper TVs, but with higher end and newer sets, you can sometimes tell the TV to treat the input as a 1:1, just as a computer monitor would do. The last resort is to dive into the settings for the graphics on the connected computer and use an over scan compensation setting. Not ideal, but at least it's better than over scan.
