Will 600w PSU be enough to power an AMD R9 280X?

I currently have an AMD 8120 CPU (not OC) , OCZ ModXtreme 600w PSU and AMD 7850 2gb.

I was going to buy another 7850, but decided against it as I would need to replace my motherboard (ASUS M5A97 has only one PCIe x16 port) and probably my PSU as well.

So instead, I want to get an R9 280X to replace my current GPU, while retaining the MOBO and PSU.

I worry that my not-so-great PSU is inadequate for running that graphics card overclocked, as well as my CPU overclocked.

Should I just suck it up and buy a new PSU, or am I perfectly fine as it is?

Its' fine. You have 504W/12V=42A on the 12V rail, and the necessary PCI-E power connectors.
