There are plenty of guides online concerning the key differences. It's fairly intuitive with 7 experience, although the bottom left & right of the desktop features do take some getting used to. I've built, and rebuilt a handful of PCs for family members and went with 8.1 on all of them. Until you figure your way around the OS, win + f will solve most problems. That's the global search hot key.

You'll in all likelihood use the Metro apps almost never. That is unless you have a touch screen. I'm a 8.1 fan with a 4 monitor setup but see little value is the Metro environment for real multitasking. Where Metro really shines is tablets and HTPCs.

You won't have to get used to it, if you are familiar with Windows 7, you can have it that way. How you ask? Well..

This adds a start button to the taskbar just like in windows 7, but more customisable. You'll have the options to hide the charms bar and all the features of the modern ui.
You can even boot to the desktop if you want too. It has all the features that Windows 7 had.
And that's it, then you're back to windows 7 except that you don't have the "aero theme" for windows.
