I was thinking about getting a case without the slot for a optical drive and I was wondering how could I install windows and it dawned upon me could I use a external optical drive?

Yes, as long as your motherboard supports USB booting. Give it a check in the bios. Other option would be using a thumb drive, which is what a lot system builders use nowadays.
