Okay so this is my build:

Amd Fx 8320 CPU
2 x 8gb Crucial Ballistix low-profile sports RAM
Cooler Master Hyper Evo 212 Heatsink (Subject to change), running 2 Cooler Master 120mm fans for push-pull
1 NZXT 120mm fan for exhaust
1 NZXT Blue L.E.D. 140mm fan for exhaust
1 120mm generic Zalman fan for intake
1 Clear Blue L.E.D. Zalman fan for intake
1 Nzxt 120mm fan for intake
Amd Radeon HD 6770 GPU (To be replaced by a GTX 780)
MSI 970a-G43 MOBO (subject to change, don't laugh)
NZXT Phantom 410 Black Case
Corsair CX600M PSU

I want to know if 600 watts is good enough to run with the EVGA GTX 780 FTW edition, once I replace the GPU

For your posted build, 600w is great. For overclocking, you'll need a bit more wattage.. nothing lower than 650w, but 700w is the lowest I'd go for, just in case. Depends on how far you're going to push the chip.

So basically, Im good to go with my single Gpu and 1,000 fans?

Cause I was told the 780 uses at least 250 watts and I may overclock just to be ridiculous.

Also, every calculator I've used its saying either 412 watts or 614 watts.

There are obviously limits to generalizations... 1000 fans at 4W each is still 4kW but for a normal system with the usual 3-5 fans on PWM or other speed control which usually operates them at a fraction of their nominal power, they are often ignored or "accounted for" by rounding other stuff up.
