Basically just going for a all out computer.

Thing i need are

  • The actual computer
    Monitors - 2 max feel free to suggest one good one.
Preferences

  • SLI - Not fussed want best performance as possible
    Overlock - Go for it
    Water cooler on the CPU for a nicer finish
    Intel Processor - i7 +

I would recommend waiting on buying the video cards, however, because Nvidia is going to be releasing their GTX 790 and Titan Black Edition soon, and the current gpu prices should go down, and you have the option to get either a 790 or the Titan black edition.

xspc watercooling kits are also very nice...

well... 3k pounds for a pc is a lot

-A single 1440p monitor for a great gaming experience.
-A single GTX 780 ti can max out anything at 1440p. I also put in a huge 1000w psu for future SLI.
-The i7-4770k is more than enough for your needs.
-The H220 is a beast cpu cooler that allows you to expand it and add more tubes and radiators.
 
I would go with a single 1440p monitor because you can't game on two 1080p monitors. You can only use one for gaming and the other one for other purposes. You're better off with a 1440p monitor and then maybe get a cheaper low-res monitor later for multi-tasking purposes when you're gaming on the 1440p.
